Christmas Pizza Minis

For this week's Rhodes Guest Blog Post, I chose to make the Christmas Pizza Minis. These Pizza Minis would make a great appetizer for a Christmas party. They are so cute and they taste fantastic! Feel free to mix up the toppings.
This was a very easy recipe, but it does requires a little planning. The rolls take 1 -2 hours to thaw, and you also need to let the dough rest for an additional 20 minutes before baking.
What you need:
12 Rhodes Dinner Rolls, thawed but still cold
flour
pizza sauce
grated mozzarella cheese
red & green peppers, cut into slices
pepperoni slices, cut into fourths
Flatten each roll into a 4 1/2-inch circle. Place circles on parchment paper.
Cover with plastic wrap and let rest 20 minutes.
Remove wrap. Dip 4-inch cookie cutters into flour.
Cut desired shapes out of each dough circle.
Pre-bake at 350F for 8-10 minutes. Remove from oven and let cool.
Top each one with pizza sauce, grated cheese, red and green pepper strips and pepperoni slices. Bake for an additional 6-8 minutes or until cheeses nicely melted.
I also left a few of the rolls as circles and cut the pepperoni and peppers into stars.
